How did you decide to open Ratskeller with the focus on sustainability?

 

Ratskeller is a GmbH and part of the Enchilada Group. They manage 160 companies with the focus on sustainability, so Ratskeller is one of them.

For me, quality is very important. I will avoid the industrial livestock farming and set priorities on sustainability, therefore we affiliate the concept of the biosphere reserve Bliesgau.

 

From where do you purchase your products? Do you pay attention to regional and seasonal products as well as to Fair Trade?

 

Because of the partnership with the biosphere reserve, we really pay attention to those criteria. We purchase our products from the Wintringer Hof, the butchery Petermann and the bakery Lenert. For the moment we only changed a part of our menu to see how guests will realize the new concept. Because of the great feedback, we will actualize it step by step.

Because of the high capacity with 300 seats, I set priorities on satisfying all customer needs.

My goal consists of purchasing, to 80%, products from the region.

Fair Trade plays a big role in my restaurant. We buy our coffee, tea and hot chocolate from Fairtrade and Darboven. We also pay attention to the origin of our wine. 

 

Do you provide information about the origin of the products to your guests?

 

Yes, we provide them in our menu. They can read about our butchery, bakery and the origin of our juices. We also present them directly at the entrance area. There they can read information about the biosphere reserve Bliesgau. Currently, we are working on a company profile to register all of our sustainable partners to give our guests the chance to buy there in for personal use.

Do you regularly check your electricity costs, and do you plan to change to green electricity?

Yes, we regularly check our electricity costs. Our cooling units have a function in which the created heat is pumped back into the water cycle. We have a detailed schedule when to turn on and off our electric appliances as well.

 

Do you also hire people with physical or mental disabilities?
Yes, our restaurant is mostly barrier free and we currently also have people with disabilities employed.

 

Are you open for criticism on the part of your employees?

Sure I am, without my employees the restaurant wouldn’t work and I really rely on their opinions and that they feel comfortable. They have signed the Diversity Charter, too, therefore everyone is treated equally.
Sometimes we do some check-ups where our employees can evaluate us and deal out criticism if they want to.
We also do so-called “Mystery Checks” to see where our restaurant stands compared to all other establishments of our group. I am glad to tell you that because of our great team we have been voted on first rank of all 160 businesses within the Enchilada group which were tested.
