Contact (EK) Ulanen Hof

Quite isolated and in the middle of the green "Almet", the local recreation area of Saarbrücken, you can find the restaurant Ulanen Hof.

In 2013 it started as an idea: a community-supported agriculture, where the citizens could help and learn something about cultivation of their own fruits, vegetables and herbs, and at the same time profit from the yields of the so-called "city farm". Nowadays, this idea has been realized.

 

At the area of the Ulanen Hof you can find flowerbeds with herbs, where you can serve youself whenever you want. Different named herbs and plants invite you to have a little nature study, while enjoying a fresh beer from the beer garden or some of the great food offered in- or outside of the restaurant.

In a personal interview Jonas Kirch, the owner of the Ulanen Hof, answered some questions regarding sustainability.

 

When asked whether the Ulanen Hof is a sustainable restaurant, the answer is not easy for him. On the one hand side he and his staff are trying hard to only use regional ingredients, be it meat, vegetables or the offered drinks. On the other hand side organic products are usually way more expensive than the local but non-organic alternative, and most visitors are not willing to pay double the price for the same piece of meat "only" if it is organic. As a result, the Ulanen Hof works with mostly regional products, but is still far from 100 % sustainability.

Even if the city farm "Stadtbauernhof" is located nearby, the harvest could never be enough to satisfy the turnover of the gastronomy. But if there has been a major harvest, which cannot be covered by the citizens who cooperate in the community-supported agriculture, the Ulanen Hof can use any additional vegetables so they don´t have to be thrown away. In the future the farm should even cover more of the used products as they are going to produce on a larger area.

The Ulanen Hof is partner of the Genuss Region Saarland, a cooperation which focuses on regional products, support of the suppliers and creation of employment opportunities in the federal state of Saarland. As a result, the whole region should become even more worth living.
The restaurant offers regional meat, pork from the Saarland. Vegetables and drinks are also from regional producers, like the winery Pfaffmann or Hirztaler cheese.
As products are regional, the Ulanen Hof works with a seasonal menu: there is one menu for summer and one for winter season, with different specialities. This of course means that not every meal can be offered at every time, but in exchange the transportation of products from other countries to Germany can be avoided.

The Ulanen Hof is one of countless examples which show how difficult sustainability in execution is. The protection of our environment must be covered both by producers and by consumers - but therefore it is vital to accept that quality has its price.
