According to this motto the owners of the Kalinski prepare their sausage menus at the St. Johanner market square since 2009.
What connects the Kalinski brothers is their passion for sausages. The latter are offered for reasonable prices and in different variations - from the classical "Currywurst" to cheese cottage sausages, the Kalinski suits every taste.
As side dishes you can choose for example sweet potato fries with Sauce Rouille (be careful - garlic!) and drink either a lemonade, regional beer or, later in the evening, a glass of Gin.
In a personal interview, the specialities of the so-called "Wurstwirtschaft" are described by one of the three owners, Oliver Dillinger.
Concerning the question if the Kalinski and the neighbouring bakery Brot & Seele can be described as sustainable, he said that it is not the main target but rather a side effect.
For example the origin of the ingredients is of great importance: almost all products come from small, local butcher shops and vegetables are sorted out according to seasonality. Preservatives and other additives are not used at all. The sauces as well as all vegan dishes are created by themselves.
In case of drinks, certain values are as important as in case of the food: if it is not organic then socially compatible, for example Viva con Agua. The use of disposable cups should be avoided if possible. Additionally, as the portions are not too big, there are only very little remains of the food which have to be thrown away.
All in all the Kalinski brothers are already promoting sustainability quite a lot, even though they are no certified restaurant neither looking for any certification.
Possiblities for improvement are, for instance, the packaging: Still disposable cups are being used, as well as the packaging of take-away food. Instead of reusable bags there are only paper bags and the food is packed in disposable dishes.
