The sympathetically renovated Icelandic farmhouse of Skalanes is set within its own nature reserve at the mouth of Seydisfjordur in the East fjords region of Iceland. Dramatic snow capped mountains, cascading waterfalls, vast sea cliffs, vibrant meadows and secluded sandy beaches are all bounded by the sea, making Skálanes the perfect place for relaxation, learning, contemplation and a different pace of life.

With environmental and economic considerations in mind, we are working towards greater self-sufficiency and are in the early stages of developing a smallholding. According to this motto the owners of the Kalinski prepare their sausage menus at the St. Johanner market square since 2009.

What connects the Kalinski brothers is their passion for sausages. The latter are offered for reasonable prices and in different variations - from the classical "Currywurst" to cheese cottage sausages, the Kalinski suits every taste.

As side dishes you can choose for example sweet potato fries with Sauce Rouille (be careful - garlic!) and drink either a lemonade, regional beer or, later in the evening, a glass of Gin.

In a personal interview, the specialities of the so-called "Wurstwirtschaft" are described by one of the three owners, Oliver Dillinger.

Concerning the question if the Kalinski and the neighbouring bakery Brot & Seele can be described as sustainable, he said that it is not the main target but rather a side effect.

For example the origin of the ingredients is of great importance: almost all products come from small, local butcher shops and vegetables are sorted out according to seasonality. Preservatives and other additives are not used at all. The sauces as well as all vegan dishes are created by themselves.

In case of drinks, certain values are as important as in case of the food: if it is not organic then socially compatible, for example Viva con Agua. The use of disposable cups should be avoided if possible. Additionally, as the portions are not too big, there are only very little remains of the food which have to be thrown away.

All in all the Kalinski brothers are already promoting sustainability quite a lot, even though they are no certified restaurant neither looking for any certification.

Possiblities for improvement are, for instance, the packaging: Still disposable cups are being used, as well as the packaging of take-away food. Instead of reusable bags there are only paper bags and the food is packed in disposable dishes.

Quite isolated and in the middle of the green "Almet", the local recreation area of Saarbrücken, you can find the restaurant Ulanen Hof.

In 2013 it started as an idea: a community-supported agriculture, where the citizens could help and learn something about cultivation of their own fruits, vegetables and herbs, and at the same time profit from the yields of the so-called "city farm". Nowadays, this idea has been realized.

At the area of the Ulanen Hof you can find flowerbeds with herbs, where you can serve youself whenever you want. Different named herbs and plants invite you to have a little nature study, while enjoying a fresh beer from the beer garden or some of the great food offered in- or outside of the restaurant.

In a personal interview Jonas Kirch, the owner of the Ulanen Hof, answered some questions regarding sustainability.

When asked whether the Ulanen Hof is a sustainable restaurant, the answer is not easy for him. On the one hand side he and his staff are trying hard to only use regional ingredients, be it meat, vegetables or the offered drinks. On the other hand side organic products are usually way more expensive than the local but non-organic alternative, and most visitors are not willing to pay double the price for the same piece of meat "only" if it is organic. As a result, the Ulanen Hof works with mostly regional products, but is still far from 100 % sustainability.

Even if the city farm "Stadtbauernhof" is located nearby, the harvest could never be enough to satisfy the turnover of the gastronomy. But if there has been a major harvest, which cannot be covered by the citizens who cooperate in the community-supported agriculture, the Ulanen Hof can use any additional vegetables so they don´t have to be thrown away. In the future the farm should even cover more of the used products as they are going to produce on a larger area.

The Ulanen Hof is partner of the Genuss Region Saarland, a cooperation which focuses on regional products, support of the suppliers and creation of employment opportunities in the federal state of Saarland. As a result, the whole region should become even more worth living.
The restaurant offers regional meat, pork from the Saarland. Vegetables and drinks are also from regional producers, like the winery Pfaffmann or Hirztaler cheese.
As products are regional, the Ulanen Hof works with a seasonal menu: there is one menu for summer and one for winter season, with different specialities. This of course means that not every meal can be offered at every time, but in exchange the transportation of products from other countries to Germany can be avoided.

The Ulanen Hof is one of countless examples which show how difficult sustainability in execution is. The protection of our environment must be covered both by producers and by consumers - but therefore it is vital to accept that quality has its price.

Is there in your café a concept of sustainable purchase?

Of course, one can and like to take on lastingness consideration, nevertheless, this is not always moveable to 100%. Primarily, we have a look on regional products from the surroundings. Fruit and vegetables are acquired in the Sankt Johanner Markt, approximately 50 m away, also the jam comes from the region and the water from the nearby region of the Bliesgau. Also in the matter of wastewater they respect the environment. For the future rainwater from the silo should be used as a water for the toilet rinse.

Do you avoid serving packaging and do you use where always possibly great bundle?

No matter whether run clientele with the small hunger occasionally or group reservations, the Café Thonet offers breakfast, lunch, dinner, drinks, coffee and also home-baked cake.

From where do you purchase your products? Do you pay attention to regional and seasonal products?

Yes of course! We attach importance to buy regional and seasonal products from different farmers, for example the Wintringer Hof and the Gemüsehof Werling, as well as smaller farmers. We also pay attention to creating our menu with regard to seasonality.

Do you cultivate some products by your own?

No, unfortunately not, I would like to but in case of time it is not possible. Because of our certificate, we are constrained to buy our products only from manufacturer, which also have this certificate. We are not allowed to buy from others.

How is your opinion on FairTrade?

Right from the beginning - which was nearly 10 years ago - until now, we purchase products like tea and coffee from fair trading partners like GEPA, which catches highest satisfaction of our guests.

Do you mind a nice cup of coffee? ;-)

How do your guests and employees value your concept?

Most of our guests visit this café consciously because of good quality and good taste. On account of this, it makes me proud to see why people are coming to Moccachili, and how the concept is working. On the other side, some guests do not pay attention on our Bio products, they only come because of the good taste.

Not only our guests are satisfied, also the employees are oriented on this philosophy. Most of the employees are coming to work by foot or by bike. They really like this concept.

Does your café fit the requirements for accessibility?

Due to limited space it is complicated to implement all these requirements. Our toilets are barrier-free and accessible for everyone.

Where do you see your strenghts?

In my opinion, we are the only café which serves this Bio quality. We create everything by our own, for example we make every day 2-5 cakes which also have a special focus on nutrition or eating intolerances like gluten-free, vegan etc. There is no chance to make it more fresh!

How did you decide to open Ratskeller with the focus on sustainability?

Ratskeller is a GmbH and part of the Enchilada Group. They manage 160 companies with the focus on sustainability, so Ratskeller is one of them.

For me, quality is very important. I will avoid the industrial livestock farming and set priorities on sustainability, therefore we affiliate the concept of the biosphere reserve Bliesgau.

From where do you purchase your products? Do you pay attention to regional and seasonal products as well as to Fair Trade?

Because of the partnership with the biosphere reserve, we really pay attention to those criteria. We purchase our products from the Wintringer Hof, the butchery Petermann and the bakery Lenert. For the moment we only changed a part of our menu to see how guests will realize the new concept. Because of the great feedback, we will actualize it step by step.

Because of the high capacity with 300 seats, I set priorities on satisfying all customer needs.

My goal consists of purchasing, to 80%, products from the region.

Fair Trade plays a big role in my restaurant. We buy our coffee, tea and hot chocolate from Fairtrade and Darboven. We also pay attention to the origin of our wine.

Do you provide information about the origin of the products to your guests?

Yes, we provide them in our menu. They can read about our butchery, bakery and the origin of our juices. We also present them directly at the entrance area. There they can read information about the biosphere reserve Bliesgau. Currently, we are working on a company profile to register all of our sustainable partners to give our guests the chance to buy there in for personal use.

Do you regularly check your electricity costs, and do you plan to change to green electricity?

Yes, we regularly check our electricity costs. Our cooling units have a function in which the created heat is pumped back into the water cycle. We have a detailed schedule when to turn on and off our electric appliances as well.

Do you also hire people with physical or mental disabilities?
Yes, our restaurant is mostly barrier free and we currently also have people with disabilities employed.

Are you open for criticism on the part of your employees?

Sure I am, without my employees the restaurant wouldn’t work and I really rely on their opinions and that they feel comfortable. They have signed the Diversity Charter, too, therefore everyone is treated equally.
Sometimes we do some check-ups where our employees can evaluate us and deal out criticism if they want to.
We also do so-called “Mystery Checks” to see where our restaurant stands compared to all other establishments of our group. I am glad to tell you that because of our great team we have been voted on first rank of all 160 businesses within the Enchilada group which were tested.

Café Zimt & Zucker

The café "Zimt & Zucker" is a small, yet cosy café in St. Arnual, Germany. Driven by the passion for baking and cooking, Mr and Mrs Harfi founded their café in 2008.

In the afternoon neighbors and walkers meet there to enjoy homemade cakes and delicious organic coffee or other selected organic drinks. In the evening the owners - Mr and Mrs Harfi - offer freshly made tagine and couscous (advance booking required).

They focus on fresh and seasonal products purchased from regional suppliers. Also unique is the wide range of organic drinks - from coffee and tea to softdrinks, beer and wine - there is something for everyone.

During summer you can enjoy the food and drinks on the green terrace.

Small concerts and art exhibitions are part of the concept. Local artists can present and sell their paintings at the café. The different exhibits create a varied, but always cosy atmosphere.
