Tools to monitor sustainable development impacts for tourism including for energy, water, waste, biodiversity and job creation will result in enhanced economic, social and environmental outcomes.

Coastal and maritime tourism rely on healthy marine ecosystems. Tourism development must be a part of Integrated Coastal Zone Management in order to help conserve and preserve fragile marine ecosystems and serve as a vehicle to promote a blue economy, contributing to the sustainable use of marine resources.

SDG 15 – Life on Land

Rich biodiversity and natural heritage are often the main reasons why tourists visit a destination. Tourism can play a major role if sustainably managed in fragile zones, not only in conserving and preserving biodiversity, but also in generating revenue as an alternative livelihood to local communities.

Preservation of local cultural and architectural heritage

Highlighting local attractions and history of the region

Support local farmers, fishermen and craftsmen

For many centuries, this property, which later witnessed the revival of Kinsterna manor, was a model of autonomy and sustainability, functioning harmoniously within a rich and lively natural environment. Fed by abundant flowing water from natural springs, the estate nourished the people living on it and undoubtedly contributed to the local economy, as shown by historical archives from the Byzantine and Ottoman years.
These traditional practices and occupations – from a time when communities were economically independent – lie at the heart of Kinsterna’s model of sustainability and of its owners’ philosophy and vision. With special emphasis on reviving and strengthening these ancient practices (harvesting grapes and making wine and tsipouro, gathering olives and producing olive oil, baking bread, making soap, weaving fabric on the traditional loom, etc.), the owners have consciously made great efforts to ensure that the local community and wider region will benefit from this impressive model of sustainability.

Revival of local traditions like soap making and baking bread in the wood fired oven

Revival of local cuisine with traditional recipes served in all of our outlets

During the restoration process, a great deal of original and local materials were used: cypress wood, reeds from nearby wetlands, slate slabs for paving and roofs, handmade ceramic elements from Geraki, old Pendelic marble, hand-made forged iron doors and various antique items such as lanterns, chandeliers, chairs, etc. Many craftsmen from the surrounding region, whose skills have been handed down from generation to generation, contributed their passion and know-how to this masterpiece as well.

SDG 8 - Decent work and Economic Growth

Tourism, as services trade, is one of the top four export earners globally, currently providing one in ten jobs worldwide. Decent work opportunities in tourism, particularly for youth and women, and policies that favour better diversification through tourism value chains can enhance tourism positive socio-economic impacts.

Another important pillar of Kinsterna’s philosophy is based on a cultivation and celebration of the human element in warm, sincere and welcoming hospitality – a well-known point of pride throughout Greece. Visitors to Kinsterna may be surprised by the friendly (and at the same time consummately professional) attitude and performance of the entire staff, who are genuinely eager to welcome visitors to this little corner of paradise in the southern Peloponnese. This is their home, and it gives them both pride and pleasure to share it with our guests.

Water reduction till Green Key standards. Uses circular material / furniture in public spaces and rooms. Tries to communicate with guests that responsible behavior can be fun too. Hotel theme is Green with a Smile.

SDG 13 - Climate Action

Planted trees in Panama and Rotterdam for CO2 compensation. Has an own urban herbal garden and flower garden next to the hotel (terrace & public space).
Guests can hire bikes and e-bikes. 10 Electric charge stations in front of the hotel. Deliveries only twice a week.

We have our own tap water machine.

Measurable achievements: saving thousand of glass water bottles over the years.

SDG 14 – Life below Water

We banned all plastic bottles and most of the plastic from the hotel. Participation in the Dopper Wave Foundation against the use of plastic bottles.

Urban boutique hotel near the waterfront. Created a small garden on the quay were people can sit and have a drink and bite.

80% of the employees is woman. This hotel gives interns an opportunity for education and maybe a job at the end of the internship. This hotel has employees from different cultures and countries.

Energy use:

- We use 100% green energy (partially produced by solar panels at the drinking water plant nearby, the rest is bought from the energy supplier as 100% green energy).

- Installation of various digital metering devices that register the energy consumption of the most important processes (Heating, ventilation, air-conditioning, car charging station, …).

- Periodic evaluation of our energy and water use.

- Installation heat pump system in the near future - see further below (SDG 13)

Water use:

- In collaboration with Aquafin we are redesigning our (waste)water infrastructure, 4 main goals:

o Reducing our water use with > 50%

o Infiltrating 100% of our collected rainwater in infiltration plants or via drip infiltration (for plants)

o Upcycling of sanitary waste water with innovative and performant techniques (e.g. phosphorus removal with Iron oxide coated sands (= byproduct produced at the drinking water plant nearby); struvite recovery, …)

o Closing our water circle (circular water)

- Urinals without water

- Focus on the benefits of drinking tapwater in our cafeteria and in our exhibits (carbon footprint of tap water is >500 times lower than the carbon footprint of bottled water, no single use plastic, …).

Waste prevention:

- Cooperation with “Too good to go”

- Far-reaching selective waste collection and recycling

Biodiversity:

- The use of pesticides by our own staff as well as our contractors is strictly forbidden.

- We use alternative ecofriendly methods for the maintenance of our terrain.

Responsible consumption:

- Regional, fairtrade, bio products in our cafetaria

- We measure the use of water, rainwater, energy and the production of waste on a monthly base. We report internally on a yearly base. Pidpa (Hidrodoe included) publishes an annual report on sustainable development.

SDG 13 - Climate Action

Carbon footprint:

- Since 2016 we measure our Carbon Footprint (= global carbon CO2 footprint together with our parent company Pidpa (drinking water company)).

- We draw up a climate plan and we defined our climate ambitions.

- We take concrete actions to reduce our energy consumption and the emission of greenhouse gasses: Periodic energy audits, multidisciplinary workgroup on rational energy management, implementation of energy saving glass film, electrical charging point for cars and e-bikes, ….

Innovation:

- 2021 – 2022: installation of a heat pump system that gains its warmth/energy from 2 massive drinking water cellars nearby (constant temperature 11°C – 2000 m³).

Measurable achievements:

Since 2016 we managed to reduce our global carbon footprint by 14%.

SDG 14 – Life below Water

Due to our geographical location (not near the coast/sea) our focus is on prevention of river pollution:

- Access roads to our facility are cleaned (by hand) on a regular basis. Installation of waste bins outside along the access road.

- We organize several initiatives related to prevention of litter (River Clean Up, Beach clean-up, plogging action for children and employees, …)

- Serving only tapwater for schools = no single use plastics

- Exhibit ecosystems (game that demonstrates the effect of human behavior/choices on nature and biodiversity, example of a closed ecosphere)

Measurable achievements:

- We reach +/- 50.000 visitors a year

SDG 15 – Life on Land

Hidrodoe is integrated in a green environment (woods, meadows). The land we own is rather limited, so we focus on small projects:

- Beehives & insect hotel in collaboration with a local beekeeper

- Wild flower meadows in cooperation with the drinking water plant nearby

- Educational nature trail for children

- Conscious choice for regional vegetation if possible

- 6 beehives and 1 insect hotel (2020: 612 honey jars)

- The honey is sold as a local product in our shop

- We also sell our own beer (nen blonde drup) – collaboration with local brewery Leysen

SDG 8 - Decent work and Economic Growth

Hidrodoe was founded in 2003.

The amount of visitors has increased over the years from +/-35.000 in 2004 to 60.000 in 2019. Due to the COVID-19 pandemic the amount of visitors in 2020 dropped to 17.000.

We take care of our employees:

- Pidpa is a sustainable employer that provides the option of 100% reimbursement of public transport and a bicycle allowance.

- We focus on well-being through a good work-life balance (sufficient vacation days, working at home, vast health insurance,…).

- We provide various training sessions for our employees for example on stress prevention, safe behavior, sustainability,…

- In selection and recruitment of new employees, Pidpa does not make a difference based on age, gender, religion or race.

Exemplary or innovative actions: Kallichoron’s personalized, award-winning breakfast service known as “Grandma’s Breakfast” that is based on each guest alimentary needs as a means to promote sustainable consumption, to reduce unnecessary food waste and energy consumption by replacing meat products with vegan options. In addition, Kallichoron has designed an internal procedure for redirecting all food waste from breakfast for animal consumption in an attempt to promote circular economy and pave the way for a cleaner island.

Travelers can choose to skip daily housekeeping, or linen change, as well as calculate and offset their journey’s carbon impact, taking part in protecting our planet.

For St Pol, “sustainability” means an integrated approach with attention to People, Planet and Profit. These three elements are always tested when making policy decisions.

Care for the environment is therefore an integral part of the sustainable policy at Hotel St Pol and is interwoven throughout the entire business.

The management and employees of Hotel St Pol take on the task of controlling the environmental impact and limiting environmental risks. Employees are given guidelines for this and they commit themselves to perform their tasks in accordance with the established procedures and the sustainable policy of the company.

Hotel St Pol complies with the Flemish environmental laws and regulations, but also wants to go a step further. Our company registers water and energy consumption in order to continuously improve and make more efficient both the infrastructure and the policy based on this data. We are committed to minimizing waste and limiting the impact on air, water and soil from our operations through an effective environmental management system. Some examples:

– In the entire hotel, the original lighting was replaced by LED lighting

– Waste is sorted in the rooms and the hotel.

– An electric charging point for bicycles and cars is available in the car park,

– In the culinary field, we work with regional products and Fair-trade products

In order to apply our policy consistently and throughout the organization, Hotel St Pol has decided to implement the required measures in the context of the Green Key.

The hotel tries to minimize its co-2 footprint. We largely manage our own electricity with 62 solar panels. acknowledge exclusively with suppliers from the region, see that they also have the same goals as we have as much as possible. The hotel strives for climate neutrality in the entire sector of (business) tourism and leisure: business managers, staff, suppliers, customers, citizens, cities/municipalities and governments. Tourism and leisure activities depend to a great extent on our environment. We must do everything we can to save that environment.

We need to maintain sustainable marine ecosystems so that fish stocks are preserved for future generations. Zeebrugge, the fishing port near our hotel, watches over this. As well as the construction of the many windmills in the sea and off the coast of Knoke-Heist, they are creating new life around these places, where there are now many more cod and shellfish. The algae growth at the foot of the windmills also contributes to the development of marine biodiversity.

our hotel works where possible with raw materials from local organic farmers in the region. Such as jams made on the farm, bread made with wheat from the region, honey from our beehives, cheeses from the region and much more.

Our hotel has had a female manager for 15 years. We also give vulnerable young people the opportunity to work with us during the holiday periods. Furthermore, we always allow young women and girls from other European countries where wages are significantly lower to work under the same conditions as our staff. Free lodging and meals are also provided for them so that they can save max.

SDG 12 - Responsible Consumption and Production The tourism sector needs to adopt sustainable consumption and production (SCP) modes, accelerating the shiM towards sustainability. Tools to monitor sustainable development impacts for tourism including for energy, water, waste, biodiversity and job creation will result in enhanced economic, social and environmental outcomes.

Exemplary or innovative actions:

- 7,5 KW Solar installation on the roof

- No gas consumption, all our water being heated by solar boilers for the showers and hot ﬁlling the dishwasher.

- Grey water system to ﬂush the toilet.

- Full organic menu, where possible bio-dynamic. 95% vegetarian with most items optionally vegan.

- Building and interior made out of used products (redesigned used shipping containers, completely reconstructable without leaving a footprint)

- Waste-free policy towards our suppliers. For example the coﬀee comes in re-usable containers to reduce plastic waste, same with the cakes, etc.

- We are currently in a “Plasticity” project with the council to reproduce new items from our own plastic waste.

- wetsuit repair instead of replacement: we repair wetsuits instead of completely replace them because they are a petroleum-based product which can only be downcycled.

Measurable achievements:

- Our solar installation produces 3/4th of our energy consumption. A standard Beach pavilion uses on average 80.000kwh/year on electricity rom the grid, we use

11.000 kwh.

SDG 13 - Climate Action

Tourism contributes to and is aﬀected by climate change. Tourism stakeholders should play a leading role in the global response to climate change. By reducing its carbon footprint, in the transport and accommodation sector, tourism can beneﬁt from low carbon growth and help tackle one of the most pressing challenges of our time.

Exemplary or innovative actions:

- Organising Beach Cleanups since 2007, including “Cleanup Kids”, the Boskalis beach Cleanup tour and this year we are proud partner of the Eneco Clean Beach Cup

- We convinced the other 3 restaurants on our patch to write a tender together for a waste collector. This way we reduced the amount of transport movements so less carbon footprint and a safer environment (and a beber price because we buy collectively)

- we work with “grondstocubers”: visitors can trade a full bag of trash for a cup of coﬀee or an ice cream.

Measurable achievements:

going from 16 waste transport movements a day to 4 waste transport movements a day (residual waste, glass, paper and plastic) and at a beber price.

SDG 14 – Life below Water

Exemplary or innovative actions:

In 2018 we initiated the “Plastic Free Terrace” campaign together with We are nature. The initiative stimulates restaurant and cafe owners to abandon single use plastics. Starting out with Beach cafe’s (now over 40 across the coast) we are currently doing a project in Amsterdam and Leiden city as a lot of plastic is landing in the canals.
